Easy Weeknight Fajitas

Create this quick weeknight fajita recipe when you are short of time. This easy to follow recipe is a perfect way to start cooking delicious Mexican food.
- 4 Tortillas
- 1 Red Onion sliced
- 1 Red Pepper sliced
- 1 Green Pepper sliced
- 2 Cloves garlic minced
- 1 Tbsp Fajita Seasoning
- 400 g Chicken or mushrooms
- 2 Tbsp Oil
- Sour cream or gaucamole
- Heat oil in a large frying pan over medium to high heat.
- Add chicken if using and fry until golden brown and fully cooked.
- Add the onion and saute until soft and translucent. Add garlic and fajita seasoning and cook for a further 2 minutes. Add mushrooms if using and cook until soft.
- Towards the end of cooking add your peppers to keep them crunchy.
- Serve in the middle of the table and let your guests make their own delicious fajitas.
- Choose your favourite sides whether its salsa, guac or sour cream.
