Easy Weeknight Fajitas

Create this quick weeknight fajita recipe when you are short of time. This easy to follow recipe is a perfect way to start cooking delicious Mexican food.

  • 4 Tortillas
  • 1 Red Onion sliced
  • 1 Red Pepper sliced
  • 1 Green Pepper sliced
  • 2 Cloves garlic minced
  • 1 Tbsp Fajita Seasoning
  • 400 g Chicken or mushrooms
  • 2 Tbsp Oil
  • Sour cream or gaucamole
  1. Heat oil in a large frying pan over medium to high heat.
  2. Add chicken if using and fry until golden brown and fully cooked.
  3. Add the onion and saute until soft and translucent. Add garlic and fajita seasoning and cook for a further 2 minutes. Add mushrooms if using and cook until soft.
  4. Towards the end of cooking add your peppers to keep them crunchy.
  5. Serve in the middle of the table and let your guests make their own delicious fajitas.
  6. Choose your favourite sides whether its salsa, guac or sour cream.
