Wash the kale leaves and remove the thick stalks in the middle. Add to a foil lined baking tray.
Season the kale with salt and chilli flakes or your favourite spices. Pour over two tbsp of oil and mix well.
Roast in the preheated oven for 8 minutes until the leaves become crispy and start to darken. Do not let the leaves burn.

These delicious kale chips are best served immediately. The oil will make the chips go soggy if left for any period of time.
