Easy Chilli Con Carne Recipe

  • 400 g Minced beef or vegetarian equivalent
  • 1 Tbsp Oil
  • 1 Large onion Diced
  • 2 Cloves garlic diced
  • 1 Red Pepper diced
  • 1 Tbsp Chilli Con Carne Powder
  • 400 ml Stock (Beef/Veggie)
  • 400 g Diced Tomatoes
  • 2 Tbsp Tomato Paste
  • 1 Tin Red Kidney Beans
  • 1 Tbsp Marmite Optional
  • 1 Tbsp Worchester Sauce
  1. Heat oil in a large frying pan over medium heat. Add onion and cook until translucent. Then add the garlic, red pepper and Chilli Con Carne powder and cook for a further 2 minutes.
  2. Add the beef or veggie equivalent and brown. Then add tomato paste and cook for 2 minutes. Keep stirring to prevent sticking.
  3. Pour in diced tomatoes, stock and bring to a boil. Once boiling turn down to a gentle simmer.
  4. Add marmite, red kidney beans and Worcestershire sauce. Simmer for 30-45 minutes until the sauce has reduced and thickened.
  5. Leave to stand for 10 minutes to cool and release all flavours.
  6. Serve with perfectly boiled rice.
