Easy Chilli Con Carne Recipe

- 400 g Minced beef or vegetarian equivalent
- 1 Tbsp Oil
- 1 Large onion Diced
- 2 Cloves garlic diced
- 1 Red Pepper diced
- 1 Tbsp Chilli Con Carne Powder
- 400 ml Stock (Beef/Veggie)
- 400 g Diced Tomatoes
- 2 Tbsp Tomato Paste
- 1 Tin Red Kidney Beans
- 1 Tbsp Marmite Optional
- 1 Tbsp Worchester Sauce
- Heat oil in a large frying pan over medium heat. Add onion and cook until translucent. Then add the garlic, red pepper and Chilli Con Carne powder and cook for a further 2 minutes.
- Add the beef or veggie equivalent and brown. Then add tomato paste and cook for 2 minutes. Keep stirring to prevent sticking.
- Pour in diced tomatoes, stock and bring to a boil. Once boiling turn down to a gentle simmer.
- Add marmite, red kidney beans and Worcestershire sauce. Simmer for 30-45 minutes until the sauce has reduced and thickened.
- Leave to stand for 10 minutes to cool and release all flavours.
- Serve with perfectly boiled rice.
