Batter
- 115 g All purpose flour see notes
- 2 medium Eggs
- 350 ml Oat milk Regular milk works fine
- 2 tbsp Sugar Caster sugar works the best
- 1 pinch Salt
Toppings
- 2 tbsp Nutella
- 0.5 Banana
- 2 Strawberries
Prepare Pancakes
Mix all the batter ingredients together until they form a smooth batter. The batter shouldn't be too thick as these pancakes are going to be thin like crepes.
Heat a small amount of butter over a medium heat in a large frying pan or crepe pan. When hot pour in enough batter to cover the base (I tend to pour about 3/4 of the pan diameter then move the pan around to spread the mixture thin across the bottom).
When little air bubble start to form on the top of the batter they are ready to flip. Slide your spatula underneath your pancake and in a quick motion flip it over onto the other side. Continue to cook for a further 2-3 minutes. When ready remove your crepes from the pan.
Repeat the above steps with the remaining batter mixture.
Create Pancake Masterpieces
Picture your crepes in four quarters. Now fill two opposite quarters with the rich creamy Nutella.
Add bananas to one of the quarters. Then add the strawberries to the remaining quarter.
Cut the crepe from the middle down the side one of the Nutella quarters to the edge. Then fold this over the next quarter and so on until you have a beautiful triangle crepe.
This is a fun way of creating your pancakes with the family. However, you can create the crepes in whatever way you like. You could even just roll the pancakes up and drizzle melted Nutella over the top. Yum.
