Ras El Hanout Roasted Vegetables Recipe

An aromatic blend of roasted veg originating from Africa.

  • 1 Red Onion Sliced
  • 1 Red Pepper Sliced
  • 1 Green Pepper Sliced
  • 200 g Mushroom cut into quarters
  • 3 Garlic cloves crushed
  • 1 Tbsp Ras El Hanout Spice Mix
  • 400 g of mixed vegetables such as sweet potato or pumpkin ((Anything you want, this may very the cooking time.))
  • 2 Tbsp Olive oil
  • Salt
  1. Preheat your oven to 180 degrees celcius.
  2. In an oven proof tray, add vegetable and drizzle over olive oil.
  3. Sprinkle over Ras el Hanout mix and season with salt and mix together well.
  4. Place in the center of the oven and cook until the veg is fully cooked. Roughly 15-30 minutes depending on the veg used and how big your chunks are.
  5. Serve with a delicious salad or your favourite roasted meat.
