Ras El Hanout Roasted Vegetables Recipe

An aromatic blend of roasted veg originating from Africa.

  • 1 Red onion sliced
  • 1 Red pepper sliced
  • 1 Green pepper sliced
  • 200 g Mushroom cut into quarters
  • 3 Garlic cloves crushed
  • 1 tbsp Ras el hanout spice mix
  • 400 g of mixed vegetables such as sweet potato or pumpkin (Anything you want, this may very the cooking time.)
  • 2 tbsp Olive oil
  • Salt


  • Preheat your oven to 180 degrees celcius.
  • In an oven proof tray, add vegetable and drizzle over olive oil.
  • Sprinkle over Ras el Hanout mix and season with salt and mix together well.
  • Place in the center of the oven and cook until the veg is fully cooked. Roughly 15-30 minutes depending on the veg used and how big your chunks are.
  • Serve with a delicious salad or your favourite roasted meat.
